Cooking with Sarah Boorer

Michael is joined by Sarah Boorer, Communications professional & CWA award-winning cook, to look at the world of baked goods, delicious treats and & easy recipes.

This week Sarah looks at Broccoli, pesto & haloumi pasta.

Ingredients 

1 packet dried pasta (I use rigatoni) 1 brown onion, chopped 2 garlic cloves, minced  4 bacon rashers, diced 1 block haloumi, diced  1 head broccoli 3/4 cup pesto 1/3 cup cream

Method

Cook pasta in boiling water with a pinch of salt. Once cooked reserve one cup of pasta water.
Meanwhile,  add diced bacon to a cold pan. Cook on ver a medium heat.
Once almost cooked add onion and garlic to the pan. Cook through.
Push bacon, onion and garlic to one side of the pan. Add haloumi.
Once cooked push to the side along with the bacon mix. Add broccoli florets. After about one minute add about 1/4 cup of water. Cover to steam.
Add pasta to other ingredients and mix.
Toss though pesto and cream. Add pasta water as needed (dash at a time) to help bind a creamy sauce.
Serve with pepper to taste.
