INGREDIENTS (serves 6)

For the beef:

  • 3 lb/ or 1.361 kg Beef
  • 4 1/2 tablespoons of oyster sauce
  • 3 tablespoons of fish sauce
  • 3 tablespoons of minced garlic
    1 1/2 teaspoon of grated fresh ginger
  • Vegetable oil for cooking

For the lime fish sauce dressing:

  • 9 tablespoons of fresh lime juice
  • 10 1/2 tablespoons of warm water
  • 4 1/2 tablespoons of fish sauce
  • 6 teaspoons of white sugar
  • 6 teaspoons of minced garlic

For serving:

  • 1 packet of rice vermicelli noodles
  • 1 soft leaf lettuce or 1 cup of micro greens
  • 3 carrots, julienned
  • 3 seedless cucumbers, julienned
  • 1 cup of bean sprouts
  • 1/2 cup of Chinese coriander – roughly chopped
  • 1/2 cup of mint leaves – roughly chopped
  • 1/2 cup of dried shallots
  • 1 cup of roasted peanuts roughly chopped

INSTRUCTIONS

1. Slice beef thinly and marinate with the oyster sauce, garlic and ginger for about 20 minutes.

2. Whisk together all ingredients to make the lime fish sauce dressing

3. Prepare rice vermicelli noodles according to the instructions on the packet

4. Prepare all the vegetables, wash the lettuce or micro greens, bean sprouts. Wash, peel and julienne the carrots , wash and julienne the cucumbers.

5. Place the noodles in serving bowls and top with the veggies and herbs.

6. Place a non stick fry pan on med/high heat, drizzle in the vegetable oil, add the beef, layered flat in the pan , leave undisturbed for about 30 seconds. Add 2 tablespoons of fish sauce, stir gently till beef is just cooked through, remove from heat.

7.Place beef over the noodles, drizzle the lime fish sauce dressing over the beef and veggies. Sprinkle with dried shallots and peanuts
