A local butcher is going above and beyond for Australia Day with some unique flavour combinations.

Wavell Heights Gourmet Butcher has rolled out a range of Australia-themed sausages, including a Wagyu, ginger and apple option.

But it was some of the more creative additions that caught Laurel, Gary & Mark’s attention when speaking with Jack, who works at the store.

Jack Rose: “And there’s a XXXX, caramelised onion and garlic.”

Mark Hine: “When you’re making the sausages with the alcohol, is it a case of, ‘One for the sausage, one for me’?”

Jack Rose: “I wish, I wish. I can tell you, Pat has done himself a good one and there is a fair bit of alcohol going through those sausages.”
