Richo’s Recipes: How to spoil your special someone this Valentine’s Day

Celebrity Chef Adrian Richardson joined Peter Fegan on 4BC Breakfast to give some expert tips on how to spice up your Valentine’s Day with some top-tier cooking.

If you’re struggling to find inspiration on what to do this Valentines day, Adrian Richardson suggested his ‘Crackling Focaccia Bread’.

Crackling Focaccia Bread Recipe

Ingredients

  • 1050g (7 ½ cups) bread flour
  • 16g (1 ½ tbsp) dried yeast
  • 5g (1 tsp) salt
  • 910g (3 ¾ cups) water
  • Oil (for greasing)
  • ¼ cup pork fat (melted)
  • 1 large shard of crispy pork crackling (or crispy bacon, broken into pieces)
  • 1 tbsp fresh rosemary, finely chopped
  • Flaky salt, for garnish

 

Method

  1. In a large bowl, mix the flour, yeast, salt, and water until well combined.
  2. Cover and let it rest for 10 minutes.
  3. Fold the dough by pulling each corner up and over into the centre.
  4. Let it rest for 20 minutes.
  5. Repeat this folding process two more times at 20-minute intervals.
  6. After the third fold, transfer the dough to a greased baking tray.
  7. Let it proof for another 20 minutes.
  8. Poke the dough all over with your fingers to create dimples.
  9. Sprinkle the rosemary on top.
  10. Drizzle the melted pork fat evenly over the surface.
  11. Press the pork crackling pieces into the dough.
  12. Preheat the oven to 215°C (420°F).
  13. Bake for 25 minutes, or until golden brown and crisp on top.
  14. Transfer to a wire rack to cool slightly.
  15. Drizzle with more oil and sprinkle with flaky salt before serving.
