For the uninitiated, December 21 marks ‘Gravy Day’ in Australia, thanks to artist Paul Kelly. 

How to Make Gravy has become the quintessential Australian Christmas anthem in the 26 years since its release.

Aside from detailing a memorable, if not questionable gravy recipe, the song has given rise to an unofficial national holiday.

Griffith University Centre for Social & Cultural Studies professor Ben Green told Greg Cary it’s not really clear when ‘Gravy Day’ caught on.

“It’s become this, I’m not sure when it happened, but at some point, the term ‘Gravy Day’ just started to float around because so many people connect to that lyric, ‘It’s the 21st of December’.
